Salad prep for dinner. Simple, easy and quick to assemble. This salad takes me literally 5 minutes to make. Getting this picture taken for Instagram took me longer than it takes to make this salad 😜
The base is arugula, then add cherry tomatoes, orange and yellow peppers, broccoli, cucumber, carrots, broccoli, jalapeño (cause I love spice), and shaved almonds and chic peas for some crunch. The protein source is ground turkey. To save time I cut all the vegetables and prepped the turkey meat over the weekend. Being prepared and prepped helps ensure that you make healthy choices at meal time.
